Guess I'm late to the game here seeing all the important ones are down. Obligatory Giygas mention.
I have to say tho, in SotC when I rode my horse full speed through the desert standing on horseback, and then jump off him and grab on to his wings before he returns to the sky I pretty much felt like king badass.

The End, again needs mention.

Sometimes i'll pop Super Metroid into my SNES just so I can fight mother brain over and over. In fact, a lot of bosses in Super Metroid were fun...But it's awesome when the metroid larva attacks the mother brain and transfers the energy to Samus and you have the rainbow beam. I always love pummeling mother brain with the rainbow beam.

Although I can't remember the names of any of the bosses, Turok for the N64 had a lot of fun boss fights...especially the later ones which were usually large and menacing.

Fighting Kefka at the end of FFVI was memorable for a number of reasons, and it just wasn't Kefka himself. Fighting the trash heap before Kefka was an excellent primer for the final fight. First of all, Kefka's insane dialogue before the fight simultaneously reminds you that the boss is awesome, and also how much you want to kick his ass for being so heartless. Then, there's the music...Of all video game music tracks, Dancing Mad remains one of my favorite. Plus his death angel-ish look was much cooler than previous clown guises...not to mention that delivering the final hit while watching him crumble down to his demise makes a nice finisher.

I have a lot of other ones, but since my recall ability sucks i'll just come back with a list later.

Most memorable boss battle has to be defeating Azure Lao-Shan Lung in Monster Hunter Freedom Unite.  I dunno, the prospect of defeating a dragon the size of a mountain (and the music in the final area) made it feel like a huge achievement.

The Metal Gear Solid battles were my favorite. Such epicness in all of them.

Though my earliest memories had to go to Final Fantasy 2 (Final Fantasy 4 in Japan).

This battle had me cheering what happened and, to this day, can't seem to find something that topped it.

The last boss in Shadow of the Colossus. The music, the desperate landscape and the beast itself all create an atmosphere that seems even tragic at times.

Also, the last fight in MGS4 is pretty awesome, too. But of course they had to ruin it all in the end.

legend of dragoon

This was the first game I played where I actually planned out how I was going to fight before hand. I'd do a test battle against the boss to see how far I could get, what they could do,to get a rough idea of their total hit points, and then I'd get slaughtered and start planning my strategy. I'd figure out how much damage my team could do in a turn, and I'd figure out how many turns it would take to kill the boss. There were many times when if I screwed up during the "hey, it is a good idea to play Simon in the middle of our battle engine, ha ha, have fun" button sequence for one character I would just reset and start over because I knew I was off rhythm and I'd end up wasting turns healing, thus making the battle un-winnable. The Divine dragon fight was really good. Melbu Frahma was just annoying as hell though.

One of my most memorable boss fights has to be Kain R. Heinlein from Garou:Mark of the Wolves. Using Terry, I got to him on the highest difficulty setting. In the first match I was flawless against him, I simply lucked into every move I needed to beat him to the punch every single time. The second round, I don't think I hit him once, or even came close. A friend of mine was watching and said "You pissed him off now, watch out." The last round was really close, like something out of a movie. We were both at "one hit will kill you" health when I landed the final attack.

The final boss(es) of the first Act Raiser also comes to mind.

i actually thought that was the least memorable. since it was a matter of evading some attacks from miles away and when you get to him, you're pretty much danger-free.

the flying bosses were always great imo. the bird colossus was epic as it seemed crazy it was that agile and you were staying on. then the long dragon one in the desert is awesome, chasing after it on the horses and grabbing onto the lowered wings... then stabbing it before having to bail off the colossus, because it's diving into the sand. SO GOOD

Bowser from Super Mario Bros 1. Since I was a kid I've been fighting that bastard to free the princess, only to find out it was actually a goddamn Toad in the castle. However, when I got older, I finally conquered my nemesis and was succesfully able to free the real princess. Even so, the many, many battles I fought with him (8) will always be burned into my memory.

I can understand when you're a kid but as an adult is Bowser really that hard to beat????

Getting to him is one thing but once you get there it's not that hard.

Nah he was piss easy, you can basically walk through him if you're big and just get hit 1 time.

But it sure was memorable, I thought that's what it was about. If we're gonna say "hardest boss fight", I wouldn't pick Bowser.

The other day playing Demons Souls, I was summoned to play as one of the bosses for another player... we fought for about 40mins, both of us equally matched until he finally just gave up and stopped fighting which I found rather hillarious and entertaining.

it's  really fun

being low level and having the dragon bone smasher I end up fighting against low level people who, somehow, always suck pretty bad

so they get chased by a madman with a 7 foot long sword and get crushed

that or they never even make it up the stairs and so i get free souls
