Prince of Persia turned to shit when it turned into a God Of War styled game. When it was king quest styled it was awesome.  Never played DQ games, Soul Nomad was okay. I know I normally post stupid shit but most of my life I've played video games. It really depends more on what type of games you like.

I have never played a NIS game, I always assumed they were just too weird for me. They are just not my thing but you're probably spot on with your assumptions. Dragon Quest VIII is probably the only one I can relate to. I enjoyed it a lot, but the game starts off very slow just like the other DQ games. If you can get past that, you will enjoy it a lot. There is minimal grinding in this one, but I would be lying if I said you could beat every boss with no troubles. It is also very old school, so if you like that type of gameplay it's okay. Don't expect anything new, because the game does none of that.
Never played Prince of Persia.

If you like jumping/climbing puzzles like tomb raider (and similarly flat combat), Sands of Time shouldn't be too bad for you. I found all the climbing repetitive, and the lineacy it has is very unimaginative. The combat feels like it was added in at the last second as a frequent break from jumping around walls and avoiding traps, unfortunately it lacks complexity, and leaves me wanting more from a game that I KNOW is puzzle first, action second.
