hey Saltw glad to be back im making 2 jars of Beet Sauerkraut. i made some jars before and it was the best sauerkraut ever and it made my place smell like a cabbage. now im thinking about making some mead so i  can join the sca,

The other month i made rutabega kraut and it smelled really gross (Beyond N.A.S.T.Y.) and it was mushy too so i threw it out.

tell me about the time you left something on the counter (And Ate It)

also like 99% of the things i consume have been sitting on the counter decomposing for an unreasonable amount of time so i am not able to comment on this issue

the smell is noticeable if it spills out of the jar (it has a good chance of doing so if you fill it up too much) and when you open it. it's not terrible but it might take awhile to get used to it and you may think it's bad (i thought i f****d up my first batch until i put it in my mouth). then if you make a real bad batch...u will know the real bad smell...

ive mostly done various veggies up until this point with various successes and failures. i haven't had kefir but i read a recipe for it. i've never tried it tho

im also sorry to hear that hundley :( coincidentally i was thinking today, i want to donate my body to cannibals. maybe liek an organ donor card you can carry in your wallet? All my good pieces can be sent to those who will use them. i will give you one if i make one

it's the least I can do. unfortunately this forum's spam protection is so horrible that I've had to practically turn off new registrations (they're turned on but it's a real drag to have to get through one) and also put restrictions on new accounts :(

oh yeah I know you were joking but I thought I'd clarify. the forum software is just awful and I should really get on with fixing it (problem is that the conversion software isn't really working very well, I think there's some bugs in it)

I'm interested in pickling or fermenting stuff too but don't know much about it. but yeah, it's impossible to buy a decent pickle anywhere here, all have yellow 5 for some reason (must have neon pickel) and other weird chemicals that aren't part of the normal process

pickling/fermenting seems to be one of the greatest divisors among people regarding food. People tend to be solidly on one side or the other.

I like Pickled Onion Monster Munch, but I am unsure about the onions themselves in jars.

Also I am wary of a PICKLED EGG. I'd probably actually love that shit, but there's something about it that makes me terrified.

i am completely inexperienced with pickled/fermented things. (i've never even eaten a pickle!) i think the only such thing i have ever had was pickled ginger, from sushi places. what exactly is the appeal of this process? what even is sauerkraut?? how would pickling work on human flesh??? i don't know anything.
