Congrats on getting a 60 gig. They have the best backwards compatibility.
Anyway, as of now, the exclusive games that are worth checking out are:
Ninja Gaiden Sigma
Heavenly Sword
Resistance Fall of Man
Folklore
Warhawk
Ratchet and Clank
Ninja Gaiden and Heavenly Sword were both pretty fun, but after I beat them, I never touched them again. I think it's probably more that they're just not my type of game (action adventure or whatever), but yeah, I found very little replay value in them (even with all the ninja gaiden addons put on the store).
Resistance and Warhawk are both must haves, in my opinion. They're both great for online play (in fact, Warhawk is only online play). But on IRC you said that's not your type of game, so I dunno. Warhawk is currently my favorite PS3 game though, and it'd be cool to play with you.
I haven't played Ratchet and Clank yet, but it's gotten pretty much universal praise. I played the demo for Folklore, and I didn't find it that fun, so I didn't get it, but a lot of people have been saying it's good, so you might be interested in that.
There are a bunch of non-exclusives that are worth getting, but you probably already know most of them (Guitar Hero III, Skate, Oblivion, CoD4, Assassin's Creed).
If you're into more traditional japanese games, like myself, you can look forward to Steambot Chronicles 2, Valkyrie of the Battlefield, Final Fantasy XIII, Nobi Nobi Boy, White Knight Story and Disgaea 3. They're not going to be out for a while though. Oh, and definitely keep an eye on Little Big Planet, since it looks fantastic.
If you're planning on buying anything from the PSN store, I'd recommend Everyday Shooter, Gripshift, and Calling all Cars (although CaC is really only good as a party game).
