I'm not sure what "hip musicblog speak" is, but...
'Sensitive' means that a good many indie songs have lyrics that emphasise how emotionally vulnerable and stuff they are, almost to the point of parody ("I always knew you'd be the one to show me a grove to lie in and cry into the treetops" - lyric from a random Stars song that manages to be both twee, obtuse, and whiny all at once).
'Quirky' means that there's a trend for bands to be as self-conciously WACKY and ZANY as possible, usually by writing songs about shit like stamp-collecting and punctuation, having high-pitched, 'geeky' or neurotic vocals, and generally sounding like a third rate Talking Heads ripoff. Los Campesinos are a good example of 'quirky' music:

'Chamber-Pop' is basically pop music with orchestral-type instruments, like violins and glockenspiels and shit. The Arcade Fire are chamber-pop.
Also, relax already. Just because someone uses fucking apostrophes or words like 'whilst' doesn't mean they're a pretentious dick. And I can't speak for anyone else here, but I'm pretty sure the reason people namecheck bands and stuff is because they LIKE those bands and want other people to check them out, not because they want to impress anybody.
