First of all, you don't
always kill Dracula. In Lament of Innocence, you fought
Death as the last boss since Dracula was non-existent during that time. In the Sorrow games, you fought Chaos and Menace, respectively, since Dracula is also non-existent in those times (as Dracula, I mean). I know it's just three games but I thought it would be worth mentioning.
You're right about the endings, though most times I find the conversations interesting, and there's usually a very neat track playing in the credits.
